Happy Birthday, Ani!

I was just about to go to bed because I am exhausted, but somehow my fingers crawled to the computer. I saw this book near my desk, noticed today’s date, and boom! I just had to squeeze this post in before the clock struck midnight.

I found out not too long ago that Ani Phyo, author of my recently purchased Ani’s Raw Food Essentials, turned 42 today. All I have to say is this: even though I’m not a raw foodie and complete vegan, I hope I age half as gracefully as she has. Must… steal… genes… 😉 haha.

Today’s breakfast: VOO topped with (more like completely buried under! ha) papaya, blueberries, strawberries, almond butter, and crushed walnuts.

I love my new square porcelain bowl! So unconventional and quirky.

Today’s lunch: another humongous everything salad containing kale, cucumber, tomato, red onion, beet greens, avocado, Don Lee Farms veggie burger, roasted pine nut hummus, and steamed sweet potato chunks.

I don’t have the time to write any further (it’s almost 12 EST and I gotta get this post up while it’s still the 17th!), so I will leave you this fine evening in anticipation for tomorrow’s post!
